The Cuisinart Vacuum Sealer is designed for home users who want to keep foods fresh longer to prevent waste and save money. It doesn’t have a lot of bells and whistles, but its compact size makes it a good choice if you need to save space.
This model is a channel vacuum sealer with a very simple control panel and a seal bar that can handle bags that are up to 11″ wide. It’s built with an accessory port and comes with a vacuum hose to allow you to seal containers externally. This famous maker does not offer an entire line of vacuum sealers. This one, the VS-100, is the only model available from Cuisinart.

The Cuisinart Vacuum Sealer VS-100 might be summed up in two words – small and simple. It won’t take up a huge amount of room in your kitchen and is light enough to easily store away when not in use, which can be a big advantage when you have very limited space.
As for simple, Cuisinart makes this unit very easy to learn and use. To begin you simply press on the lid until it locks in place. Locking the lid isn’t tricky, but be aware that it does require some hand strength. You then have 3 control buttons:
- Seal Only – Use when no vacuum is needed.
- Vacuum Seal/Cancel – Press once to start the vacuum and sealing process, and the machine will stop when finished. This button is also used as the Cancel button when you want to stop the vacuum process early to keep from crushing delicate foods.
- Canister Only – Press this button to vacuum seal external containers using the accessory port and vacuum hose.
The vacuum hose that comes with this unit stores internally, and it allows for external sealing. Cuisinart does not make any containers specifically designed for this model, but other brands may work. See more under Bags and Containers below.
Like all suction vacuum sealers this model works best with dry foods, but it’s also possible to get a good seal with moist foods such as raw meat or fish. Your bag should contain only a very limited amount of natural juices or marinade, and when you see the vacuum begin to draw the liquids up to the seal you have to press the cancel button to stop vacuuming. Many other channel vacuum sealers have a “moist” setting to help you control this process, but the Cuisinart doesn’t offer that option.
While there is not a lot of feedback available, the majority of those who do own this model really like it and feel it delivers as promised. It’s easy to use and works well for a variety of foods such as fish fillets, berries and other fruits, garden vegetables, and all sorts of meats. As with any other suction type vacuum sealer there is a learning curve involved for foods with a high liquid content, but some users have even been successful in vacuum packaging sauces.
One nice design feature of this model is that if the foam gasket wears out, it can be replaced. A new one currently sells for less than $10, which gives you an inexpensive way to extend the life of your sealer.
Another plus is the 3 year warranty, which is longer than some of the cheaper models of vacuum sealers.
There are a few drawbacks worth mentioning. One is that the bag cutter included with this unit is just a little handheld widget that you use manually. It may come in handy, and there’s a designated space inside the machine where you can store it, but be aware that it’s nothing fancy.
Another minor inconvenience is that the integrated drip tray cannot be removed, so cleaning is a little more trouble than on similar models.
It also seems odd that Cuisinart doesn’t make any accessories or external containers designed for this machine (especially when you consider all the many accessories you can buy for one of their food processors!). Nor is there any information from the manufacturer stating exactly which brands of accessories are compatible. Instead, you can only “assume” or rely on what you can read online from other owners of this particular channel vacuum sealer.

Bags & Bag Rolls
Cuisinart VSB-811 Vacuum Sealer Bag Rolls come in two widths, either 8 inch or 11 inch. They are suitable for use in the freezer, refrigerator or microwave and have a writing strip down one side for labeling the contents.
You may also want to check out the Vac-Fresh brand which costs less and gets an extremely high approval rating from consumers. They’re available in different sizes and thicknesses, but for an example see the Vac-Fresh Roll 11″ x 50′ Vacuum Seal Bag 3.5mil Roll Commercial Grade Embossed for Vacuum Sealers.
NOTE: Keep in mind that whatever brand you buy, the bag rolls must be made of the kind of textured material required for use with a channel or suction type vacuum sealer. Otherwise, it is impossible for the machine to remove air from the bag.
Other Food Containers
Cuisnart does not make other containers. Based on what owners have to say online, most of the canisters and other containers made by FoodSaver should work with this model, but to my knowledge there is no statement from the manufacturer to verify that.
There are no accessories available for this model, but Cuisinart does sell the bag cutter, vacuum hose, and the foam gasket as replacement parts. However, since this model has been discontinued, there is no way to predict how long these replacement parts will be available.(Back to Top)
Cuisinart makes some high quality kitchen appliances that are long time consumer favorites, yet its vacuum sealer ranks fairly low on Amazon’s bestseller list. There aren’t very many online reviews for this model, and in those you won’t find a lot of complaints, so it hasn’t earned a bad reputation for not working properly or breaking down. To venture a guess, shoppers may be choosing other brands because compared to competitive models in this price range, the Cuisinart offers fewer features than most and no accessories designed specifically to work with it.
In fact, there are really only two basic complaints. One is that the cord is too short, and if you’ve visited The Healthy Kitchen Shop before you know that is the accepted standard. Almost any small kitchen appliance you buy will have a very short cord for the simple reason that it’s a safety feature. The other complaint mentioned several times is about the bag cutter. One went so far as to say just get your scissors because the cutter that comes with the unit is useless.
On the other hand, about 80% of owners rate the Cuisinart Vacuum Sealer at 4 or 5 stars. That comes from a very small data pool, but those satisfied customers say they would recommend it to others because its compact size is a real space saver, and it does a good job if you use it as intended. You should get very good results with dry foods, and with a little practice you may also do well vacuum sealing moist foods or even some thicker liquids.(Back to Top)

Cuisinart Vacuum Sealer Review: Summary
The Cuisinart Vacuum Sealer can be a good choice for home users who want more than a simple handsealer without sacrificing a huge amount of counter space or cabinet storage. It lacks some of the features of other models in this price range and doesn’t have any brand specific accessories, but it’s easy to use and does a good job on common tasks.
